I have recently started a ketogenic diet from The High Fat Diet, a 2 week diet and a follow on maintenance plan (which I will review for you all once I am finished). Ketosis is a metabolic state whereby your body utilises fat instead of glucose for energy, which means there needs to be almost ZERO carbs in your eating habits (including the ones hidden in things you thought were a fat/protein) and aproximately 75% of your diet dedicated to fat. There are many different types of these diets, but for now I am just getting used to this way of eating to see how my body responds to it.
Enough of that for now, what I am really here to tell you about is CARB FREE CHEESE TOASTIE! Yes, that’s correct, you heard me right.
I have tried other carb free cheese toasties but this one trumps all! You should take note, that if you are eating sugar and carbs that this is a high fat dish, but most importantly it is carb free.
So what is the bread then? Cauliflower.
I know what you are thinking; “I’ve tried cauli-pizza/wrap before and it failed and it was disgusting”, and I hear ya, but trust me when I say this is incredibly delicious. Not as in “the closest to delicious you will get on a diet” delicious, just straight up, real life, delicious.

***COOKING TIP: When you take the “bread” out of the oven, lift the parchment paper off the baking tray and gently flip it upside down on a flat surface. Gently peel the paper off, it’s easier than lifting the “bread” off. Use the whiter side to spread the butter on as it hasn’t had a chance to brown like the other side did in the oven.
