It’s Pancake Tuesday, well technically it’s Shrove Tuesday, but all I hear is PANCAKES! Many people around the world celebrate Pancake Tuesday, whether they know why or not, the importance here is PANCAKES!
Here are my top 5 in ascending order…
5. CREAM CHEESE PANCAKES FOR THE KETOGENIC DIET
Ketogenic diet, is more of a way of eating than a diet per se. It centres around a high fat, moderate protein and a VERY low carb intake.
2 oz Cream Cheese
½ tsp Cinnamon
1 pkt Stevia
4. GRACIOUS PANTRY ZUCCHINI FRITTERS
Eating the RDA of green vegetables is somewhat challenging, so here is the perfect way to get in a little extra.
6 egg whites
1/2 cup raw quick oats
1 small zucchini, grated
Oil of choice
3. QUINOA BANANA PANCAKES
Not for the grain sensitive
1/2 cup oats (ground into a flour-like consistency)
1/2 cup quinoa (cooked)
1/2 cup almond milk
1 tsp raw honey
2 egg whites
1 mashed banana
1tsp vanilla extract
Combine quinoa, milk, oats and honey
In a small bowl mash banana and stir in vanilla and stevia and add to quinoa mix
In a separate bowl whisk eggs until fluffy and forming peaks
With a spatula fold egg whites into mixture
Use 1/3 cup to measure portions to pour into pan (sprayed with non stick coating or coconut oil) on medium heat (3-4 minutes a side).
Top with whatever you like, I chose frozen raspberries.
(Personally I am not a fan of stevia it’s sweet enough with the banana)
2. PALEO SWEET POTATO PANCAKES
Sweet potato is one of the best carbohydrates you can have living a clean eating lifestyle. For this recipe you will need the following.
1 cup Mashed Sweet Potatoes
2 cups Almond Meal
4 Tbl Almond Milk
½ tsp Baking Powder
½ tsp Vanilla Extract
½ tsp Ground Nutmeg
½ tsp Ground Cinnamon
1. THE SIMPLE EGG & BANANA PANCAKE
This one has been done over and over again, in my particular household and many more. Reason being, it’s a winner.
2 eggs (organic or free range preferably)
1 banana (the riper the better)
Mash banana and beat eggs separately. Combine and add a sprinkle of cinnamon.
Pour like normal into a non stick pan (you’re going to need a good one) with a bit of coconut oil. Wait until it is sturdy enough to flip, look out for bubbles forming.

Look, sometimes you just want a pancake and don’t want to hear about mashing up bananas and eggs. So if that is what you are thinking after reading all of this, try out a healthier version of the real thing.
